Australia exclusively develops and grows Galaxy, a hop that brewers worldwide highly seek and regard.  It is able to offer bold flavour profiles including passionfruit, citrus, peach, blackberry, blueberry, blackcurrant and aniseed, especially when used as a late addition. The flavour is often quite intense upon production but mellows as it matures.
